My focus is not the basic tutorials. There are lots of those out there and some are really good. I'm looking to cover stuff other people don't. My main focus will be on the creation of interactive widgets. This list is pretty small right now, but it should grow as I figure more stuff out.

Create GeoGebra Widgets - Quick blog post I did the other day. Built on the work of Anthony DiLaura
Create your own YouTube Widget - You can use Tumult Hype to embed lots of other content as well. (Confirmed: Vimeo, ShowMe, ArcGIS Online, Blip.tv)
Use Processing to Create Widgets - Processing is an open-source programming language based on Java. Code created in Processing can be executed as Java Script and used in an HTML5 Widget. There are lots of great tutorials out there for learning Processing, including some that I've put together.
Tumult Hype - Great program for creating HTML5 widgets. It's not free, but there is an educational discount (only costs $20).

Embed Web Content - Use Hype to embed just about any embedable content into your iBook. If it has an iframe embed and it works in Safari on your iPad it will probably work in your iBook.
Document Inspector - Quick tour of the inspector window.
Simple Animation - Just a quick walk-through of how to create a simple animation.

Create Interactive Videos - Use either Keynote or Tumult Hype to be able to ask questions to your students and then provide different responses depending on how they answer.
Create Custom Animations in Keynote - Keynote can be used to create animations or add cool effects to videos. Great for inclusion in your multi-touch book.
Add an Interesting Frame - Drop a gallery widget, Keynote, or video into a frame to add some visual interest to your book.
Create an Interactive Map using Keynote and Gimp - Have you wondered how you could create interactive maps like the did n E.O. Wilson's Life on Earth? Well, wonder no longer.
Interactive Math Practice Widget by Tara Maynard in Keynote - Includes Tara's Widget template you can use in Keynote and a video overview of how to use the widget to create an awesome interactive element for your book.
